B Cool Air Conditioning & Heating Inc. is the contractor for the project at 14329 Beach Blvd. in the Pablo Station shopping center.
Plans show that a former tire store will be converted into an almost 4,000-square-foot restaurant for Brooksville-based Florida Cracker.
Brothers Blair and Ethan Hensley are partnering with ServStar Management Group of Jacksonville Beach to open the Florida Cracker Kitchen, a tap room and the Florida Cracker Trading Co.
Blair Hensley said Tuesday that pending approvals, he hopes to open in 60-90 days.
Florida Cracker Kitchen will comprise a dining room, bar, private dining, kitchen, outdoor dining at the entrance and back patios for dining and the bar.
The permit indicates a $180,000 renovation.
The plans show a 3,647-square-foot building for the restaurant and a separate small former car wash that will be converted for storage.
They opened the original Florida Cracker restaurant in Brooksville in 2013 and, through meeting ServStar Vice President of Strategy Robert Tilka, will venture into Jacksonville pending permitting.
Blair Hensley explained that a Florida cracker is a Florida cowboy so named from the crack of the whip while hunting wild cattle in the swamps.
Hensley said the 150-seat Jacksonville location will be remodeled to resemble the Brooksville restaurant.
He said that the merchandise sales will be scattered within the operation.
Hensley said it will operate 7 a.m.-2:30 p.m. Tuesday-Sunday and close on Monday. The tap room closes at 2:30 p.m., also.
The restaurant will open for breakfast and lunch. Hensley said all the food is freshly prepared and includes family recipes.
Florida Cracker bakes its own breads, makes its own gravies and cuts its own fruit, for example.
