Fishweir Brewing Co. plans to open Thursday in the renovated former Fat Kat nightclub space at 1183 Edgewood Ave. S. in Murray Hill.
The owners are Broc and Stacey Flores. Broc Flores was a home brewer for more than 10 years and Stacey Flores managed a distillery and tasting room in South Carolina.
Broc Flores said they wanted to create a “place that people feel comfortable” in visiting.
The brewery will feature sour beers that have a tart, acidic taste. Sour beer takes six to eight months to mature and will not be ready for the opening. Other beers will be available.
The bar top is made of solid red oak milled by Florida Crotchwood in Gainesville.
The tables were made from pine rafters from the renovated building.
The restroom vanity counters are milled from a tree from Fishweir Park.
The brewery features a climate-controlled barrel room specifically for sour beer.
The space also will be used for events and catered beer dinners. A wedding and Christmas parties are booked, according to Broc Flores.
The brewery doesn’t have a kitchen, but will offer catered food, such as cheese plates from Grater Goods cheese shop on Edgewood Avenue and Murray’s Taco Bodega next door.
Fishweir Brewing also has a specialty beer club called the Oak Club, with monthly meetings, specialty beer releases and tastings. The maximum 150 membership sold out in 11 days.
