Blue Bamboo chef and owner Dennis Chan and EnVision Design + Engineering filed civil engineering site plans with the city for the restaurant Chan proposes at 10110 San Jose Blvd.
Chan plans to convert an attorneys’ office building into an Asian eatery. Plans show the existing 4,342-square-foot building will be expanded to 7,584 square feet on the 1.05-acre site.
Chan said an architect, kitchen designer, and contractor walked the inside of the building “to see what structurally we have to work with,” he said.
“Believe it or not, it’s the first time I’ve seen the inside of the building,” he said. Chan said he loves the neighborhood “and that was enough for us to consider a new restaurant there.”
He opened Blue Bamboo, a “Hip Asian Kitchen,” 14 years ago at 3820 Southside Blvd. “We still love Blue Bamboo for the name of our new location,” he said.
He hasn’t decided on the number of seats and he said renderings aren’t available. He is meeting with the kitchen designer and architect and hopes to start construction about Oct. 1.
Chan received a zoning exception and waiver to sell alcohol at the site. Through Blue Bamboo Land LLC, he has a contract to buy the property.
Patricia Owings, a senior broker-associate with Strategic Sites Clifford Commercial, said she spent a year working with Chan on a location.
“I saw this site, Dennis said ‘let’s get creative.’ And here we are,” she said. “I can’t wait for the public to see the final transformation.”
