Plumbing and utilities were installed last week for a new restaurant opening downtown. Targeting a late summer opening, the restaurant, which will be located on the first floor of the Baldwin building across from the Haydon Burns Library on East Adams Street, will serve Guatemalan-themed food and cater to the lunch crowd. After renovations are complete, a second, higher-end restaurant may open upstairs, though details surrounding that project are still uncertain.
