Dig Foods, one of Downtown's newest lunch destinations, is vegan, organic and locally sourced.
Chef and co-owner Shawn Sigmon said opening a restaurant Downtown has meant coming full circle.
He and his staff had been cooking and serving at "pop-up events" for a few years before setting up shop last week to offer lunch Monday-Friday at 113 E. Bay St., in the front section of Underbelly.
"We started at Underbelly when it was in 5 Points," Sigmon said.
The salads, sandwiches and entrees at Dig Foods are exclusively vegan.
The ingredients are organic and locally sourced as much as possible and the selections change weekly based on what's available from local farmers and artisan bakers, Sigmon said.
Many items on the menu are gluten-free.
Sigmon said the site was chosen because of the relationship with Underbelly. He said being Downtown should open a new market for Dig Foods.
"We've had a tremendous response so far and we're getting comfortable in the space. We think Downtown could use a light, healthy lunch option that won't make you feel like you need a nap when you get back to the office," he said.
Dig Foods is open 11 a.m.-3 p.m. Monday-Friday.
