Coastal Kitchen is open in the new Hilton Jacksonville at Mayo Clinic, according to an Oct. 21 news release.
The hotel is at 4745 Transformation Way on the south side of the Mayo Clinic in Florida campus, off San Pablo Road South and Butler Boulevard.
The 6,000-square-foot restaurant is off the main lobby. It offers bar seating, a lounge area and sit-down dining with inside and outside options.
Coastal Kitchen will offer regional dishes on its menu, the release said. Entrees include:
• Mayport shrimp roll with remoulade and pickled red onions on brioche.
• Achiote Mahi tacos topped with roasted corn.
• A half-smoked chicken with fingerling potatoes, honey-roasted carrots and Brussels sprouts.
• Mojo skirt steak, served with tostones and a fennel-arugula salad.
• Miso-glazed salmon paired with ancient grains, roasted mushrooms and crispy wonton strips.
Desserts are Florida key lime pie and pecan tartlet with vanilla ice cream and chocolate sauce.
The release did not list prices.
The executive chef is Andrew Kallsnick, who has worked under the Marriott, Renaissance and Omni flags in Grove Park, Orlando and in Savannah, Georgia.
Coastal Kitchen serves breakfast from 6:30 a.m. to 10:30 a.m. and an all-day menu from 11:00 a.m. to 11:00 p.m. The bar is open from 11 a.m. to midnight.
The hotel is cashless and accepts all major credit cards.
The eight-story, 252-room hotel opened with a two-day celebration that started Sept. 29. It was built by North Carolina-based Concord Hospitality Enterprises and the California-based Whitman Peterson private equity real estate company, in collaboration with Mayo Clinic.
When the project was announced in September 2021, the projected cost was $70 million.
