Burrito Gallery targets January opening

After running into construction troubles and permit delays early in the project, renovations are back on track for Burrito Gallery on East Adams Street. The new Guatemalan-themed restaurant was scheduled to open in November, but that date has been pushed back to January.

Tony Allegretti, developer and one of four partners involved in the restaurant, said they would now like to have the new restaurant open by New Year’s Day.

“The opening has been pushed back to early winter because we had three hurricanes, we had grease trap troubles,” said Allegretti. “There are a ton of unknowns when working on a historic building like this.”

Allegretti said an agreement has been reached with the City about the restaurant’s placement of a grease trap.

Another reason the grand opening has been delayed is the extensive renovations. Allegretti said the building was in dire need of renovation and was pretty rundown before the project started.

“The building itself is in as bad a shape as any we have ever worked on,” he said. “But we have been very thorough with this renovation. We would like to see this building last another 100 years.”

Once finished, the building will feature two separate restaurants. The Guatemalan-themed Burrito Gallery will be located downstairs and upstairs will feature a “destination” restaurant, said Allegretti.

On the first floor, the Burrito Gallery will serve a variety of Latin American specialties and will

also host work by a featured artist.

There will also be a large patio

area near the rear of the

restaurant.

The upstairs will also feature a themed restaurant, but those plans are still being developed, Allegretti said. They have agreed to bring in an executive chef from the Delray Beach area for the second floor restaurant.
