Plaza III gets saucy

Leave it to someone with a spice for a last name to bring a little zest to the menu at Plaza III. AM-690 Sports Director Cole Pepper (left) has teamed up with the Downtown restaurant owner Bard McLean (middle) and chef Mike Silverman (right) to use Cole Pepper’s Black Jack Barbecue Sauce on menu items including the grilled chicken sandwich, the Black Jack Hamburger and the Black Jack Shrimp Brochette. Silverman is working on creating other items, possibly even meatloaf. Plaza III is using the Sweet Hot flavor, which is the first sauce Pepper bottled — all together he’ll bottle four flavors. The new items started Tuesday. Plaza III is a Kansas City-based outfit and Pepper said to him, it’s just a perfect union. “I’m from Kansas City, but have made Jacksonville my home,” he said. “The sauce is Kansas City inspired with some southern roots — it blends together.”
