Logan Willie and Emily Freger brought some homemade vegan cupcakes to the Jacksonville Landing Market Friday.
Willie said she decided to adopt a vegan diet about three months ago and soon discovered it was difficult to find sweets that she liked that also fit in with her new nutritional plan.
“I found a few recipes, then I started baking and experimenting,” she said.
Her cupcakes are made with no animal products, including eggs, which are replaced by coconut oil. Willie usually sets up her table at the weekend market at Whole Foods in Mandarin, but wanted to share her culinary endeavor with Downtowners, too.
