Owners of the new Golden Corral Buffet & Grill in West Jacksonville hope to open the location by mid-April and no later than the beginning of May.
“We will definitely be in there by Mother’s Day,” said Janet Murphy, with Cardinal Corral of Jax Inc.
Murphy and her husband, Rick Eggemeyer, are single-unit franchisees and will relocate the restaurant currently at 7043 Normandy Blvd.
National Consulting & Development Inc. is building the almost 11,500-square-foot restaurant on almost 2.6 acres at 1201 Memorial Park Road.
The new restaurant will seat about 400 guests and employ about 115 people, which is 10-15 more than the staff at the existing store, she said.
Records show owners are investing at least $1.66 million into the venture, including the cost of buying and clearing the land and building the restaurant.
Murphy said they would be using a lot of the equipment from the existing store, “so it’s not the total you would have if you were building from scratch.”
She said they hadn’t decided whether to buy additional equipment.
• A building shell is being built at 7908 Blanding Blvd. Dunkin’ Donuts will be one of the tenants in the 7,350-square-foot building.
