The Salty Fig restaurant takes root in Riverside

In a truck-to-tables development, The Salty Fig restaurant is taking shape at 901 King St., at King and College streets in Riverside.

Executive Chef Jeff Stanford said Thursday the 151-seat restaurant should open in October to offer its “new American Southern food,” now popular with The Salty Fig food truck that travels to locations around town to set up and serve.

The property is owned by 901 King St. LLC, led by AccuBuild Development Corp. and lawyer I. Mark Rubin.

Suncoast Industrial & Construction Services is listed on the permit issued Tuesday. Rubin said AccuBuild Construction will be the contractor for the $300,000 tenant build-out.

Rubin is the managing member of an integrated set of AccuBuild companies that develop, build and manage properties.

Rubin said The Salty Fig, which calls itself a gastropub, brings a concept to town that offers a European pub environment with an accent on culinary offerings.

“This is something very different for Jacksonville,” he said. He estimates the project carries a total investment of about $500,000.

Rubin said The Salty Fig will occupy about 3,700 square feet of space. He said the location has housed a pharmacy and a meat market, but has been vacant since the mid-1990s.

Stanford said the food truck will remain in service when the restaurant opens. Stanford said he and his brother, John Stanford, are the operating partners and are backed by financial partners.

The restaurant will serve lunch and dinner. Stanford said operating hours and the employee count are being determined.
