A Utah-based catering and box-lunch company intends to open in North Philips Highway Commerce Center.

Apple Spice, based in Salt Lake City, franchised with Jim and Susan O’Leary for the Jacksonville location.

Jim O’Leary said the project was in permitting and he didn’t have a start date for construction.

The city is reviewing a permit application for a 2,308-square-foot build-out for Apple Spice at 3061 Philips Highway, No. 102.

Sport Nobles Construction Inc. is the contractor for the $157,860 project.

According to applespice.com, Apple Spice opened its first box lunch delivery and catering company in 1988 by founders Randy Clegg and Wayne Curtis, who rented a storefront from 88-year-old Fritz Haertel.

The age of Haertel, known as the “Rye King” of Salt Lake City, required him to downsize his bakery but he remained to hand down culinary wisdom, said the website.

Over the past 30 years, Apple Spice has grown to nearly 50 stores, specializing in business, corporate and special event lunches.

It says it bakes its bread daily. Each boxed lunch includes a sandwich or wrap, side dish, mint and a fresh cookie.

The website shows two Florida locations in Orlando and Sarasota/Bradenton and four more, including Jacksonville, coming soon.
