The Jacksonville food truck scene is getting cheesier.

Chef Chriss Brown of 927 Events announced Monday she is starting Say Cheese, a mobile business that specializes in gourmet grilled cheese sandwiches. Julie Blackman is the company’s general manager and food truck operator.

The vendor will source as many ingredients from local farms and small businesses as possible, Brown said in a news release.

The eatery’s breakfast menu includes omelets and breakfast sandwiches. The lunch menu features the staple gourmet grilled cheeses served with spiral cut potatoes.

The first public appearance will be Thursday during the NCAA Division I Men’s Basketball Championship games hosted at the Veterans Memorial Arena.

Baptist converting deli into food court

Baptist Health is renovating the Rainbow Cafe at its Downtown Southbank campus into a food court with a new name and specialty stations and a Coca-Cola Freestyle machine.

The café is closed and work started this week for the project, whose construction cost is estimated at $620,700. Equipment will boost that investment. It could re-open in July.

Spokeswoman Cindy Hamilton said the renovated area will include a pizza/pasta station; cooked-to-order grill items; a deli station; a salad station; an entrée station with traditional and Southern favorites; and beverages include the Coke Freestyle machine.

Jazzman’s Coffee Bar will be located in the new café.

Hamilton said the hospital is sponsoring an employee contest to rename the Rainbow Café.

While the café is closed, several food options will be available.

Jazzman’s Coffee Bar is temporarily relocating to an area adjacent to Financial Services on the first floor of Baptist Jacksonville and will be open 7 a.m.-10 p.m. Monday-Friday.

It will offer a limited menu with baked goods, grab-and-go salads and sandwiches, packaged snacks and sodas.

The Tower 8 Cafeteria is extending its hours and will remain in its current location.

The Heart Hospital Jazzman’s will be open 7 a.m.-3 p.m. Monday-Friday and offer all of its items.

Chick-fil-A is open 7 a.m.–4 p.m. Monday-Friday on the first floor of the Howard Building.

Batson-Cook Co. is the contractor for the 4,121-square-foot Rainbow Café project. It will be operated by Sodexo Health Care’s Fresh Inspirations dining concept.
